One-third of all food produced in the world is lost or wasted every year. Food waste is responsible for over 7 per cent of the world’s greenhouse gas emissions, making it a key challenge in tackling climate change. It has significant environmental, social and economic costs.

Winnow was founded with a simple belief that food is too valuable to waste. Winnow helps the foodservice industry plan more effectively, cook smarter and become aware that by doing so we are not only saving ourselves money but creating a more sustainable future that we can all feel proud of.

Winnow founder Marc Zornes is a former Manager at McKinsey & Company where he was a leader in the Sustainability and Consumer practices. While at McKinsey, Marc co-authored the McKinsey Global Institute report, Resource Revolution: Meeting the World's Energy, Materials, Food and Water Needs. In developing this report, his team highlighted food waste as one of the biggest issues globally and yet very little was being done about it. Marc then left McKinsey to found Winnow to help chefs run their kitchens more efficiently focusing on helping chefs understand and prevent food waste.

Winnow has grown at a rapid rate since launch in 2013. From a single staff restaurant in the UK, we are currently operating in 39 countries across North America, Europe, Asia and the Middle East. We have deployed over 1,000 systems and translated our app in over 20 languages.

Our role is to help provide intelligence for chefs to make better decisions and prevent food waste from happening in the first place. The impact of this is environmental (in the form of reduced impact and CO2 emissions by reducing waste), social (by measuring and managing food waste using Winnow, kitchens are saving over 18 million meals from landfill) and financial (i.e. by reducing waste kitchens can reduce the food they purchase).

Winnow’s tool and combined with an effective change management program is directly responsible for delivering dramatic reductions in food waste in the businesses we work with. The system has already proved that it can be implemented at scale to deliver significant savings for the entire hospitality sector. Our achievements demonstrate that our technology can provide a scalable, cost-effective solution to reduce food waste and empower chefs to run an efficient operation.

Food waste is a problem that will define our generation. Until relatively recently we didn’t know the full extent of the problem but today we know that food is wasted on a colossal scale harming both people and planet. If we are serious about creating a more sustainable world, addressing the problem of food waste is not desirable, it is essential. Winnow helps the foodservice industry plan more effectively, cook smarter and become aware that by doing so we are not only saving ourselves money but creating a more sustainable future that we can all feel proud of.
